A vehicle body, and the industry Ambato is built on — the workshops here build the bodies for most of Ecuador's buses onto imported chassis. If someone says they work en carrocerías, that is what they mean.

The city's carnival festival, created in 1950 as a deliberate act of recovery after the earthquake that destroyed Ambato the previous year. Held in February and the biggest event in the central sierra.

The leather parish up the hill west of the city — a whole village of tanneries and jacket workshops selling at a fraction of city prices. Ecuadorians drive here from Quito to buy leather.

The Ecuadorian ID card, issued by the Registro Civil once your visa is granted. Banks, cooperatives, the IESS, the SRI and every municipal counter work from the cédula number rather than your passport.

The unified basic salary, USD 482 for 2026. Almost every Ecuadorian visa income threshold and social-security floor is a multiple of it, and it is reset each December.

The simplified tax regime for small taxpayers and 'negocios populares'. In a city this commercial and this full of small workshops and market traders, which regime you fall into is the tax question that actually affects people.

The municipal road-use charge on a vehicle, paid at the municipality's own windows. It is separate from the provincial vehicle tax and from the national registration, and all three must be settled before you get a plate sticker.

The wholesale market — the produce clearing house for the central sierra. Ambato is where fruit and vegetables from three provinces are traded before they go anywhere else, which is why food here is the cheapest in the country.

Fried potato-and-cheese patties with peanut sauce, chorizo, egg and avocado. The definitive sierra plate, and Tungurahua and Cotopaxi both claim it. Market food, cheap and enormous.

Volcanic ash. Tungurahua, 30-odd kilometres away, was in eruption on and off from 1999 to 2016 and ashfall reached the city. Everyone here knows what a light dusting on the cars means and where to check.
